This is a recipe you use with those strawberries you cant figure out what to do with. Have you got into the supermarket and they have plenty of them in display and are wondering how to take advantage of the great price they are on? This is the quick delicious solution.
3tbsp Lemon Juice
1.Clean your strawbwerries and divide into two. Its ok if some are mushy/soft. Its at this point when you weigh them.
2.Whatever weight of the strawberries will be the weight of the sugar you will use.
Add the lemon juice to the strawberries while on a non metallic container and you may mush the berries slightly with a fork or just leave them as they are.
3.On a suitably sized pot, cook the strawberries over medium heat til they are soft. This should take about 4-5 minutes depending on the amout of strawberries.
4.When soft and wet from the strawberry juices,add the sugar and stir till dissolved. Use a non metallic spoon/spatula.
5.Allow to boil and do not stir when boiling. Allow to cook for about 15minutes if using 1kg of strawberries.
6.To check that it is ready, use a cold small plate(put in the fridge in advance) and pour the jam onto it. When completely cooled down, put your finger and push it forward and the skin should wrinkle. If it doesnt, continue to boil the sugar for a minute or two more.
7.Remove from heat and using a metalic spoon, remove the scum formed and discard. Allow to cool and put in airtight jars for storage.
8.The jam keeps well if stored in a cool place away from direct sunlight and after first use, keep in the fridge.
