It’s Austrian and roughly translates to “Emperor’s Mishmash” as legend says it was created for Emperor Franz Josef. Whatever the case all I know it is fluffy, “warming & delicious” and without the baking powder. Hope you get to enjoy it.
- 4 Eggs
- 45gm Sugar
- 100gm Flour
- 150ml Milk
- 40gms Unsalted Butter
- 40gms Raisins(you can choose to soak in rum or plain)
- Icing sugar(to serve)
1.Separate the eggs and put the yolks, sugar and milk in one bowl. Mix together then add your flour to form a smooth batter.
2.The whites should be in a clean dry bowl. Whisk the whites using a balloon whisk til they are stiff.
3.Fold the stiff whites into the batter and mix gently til fully mixed. Transfer to a small jug which you can use to pour the pancake mix during cooking.
4.Melt 10gms of the butter over a medium heat and when it starts foaming,pour 1/4 of the batter then spread evenly by moving your pan. Sprinkle 1/4 of the raisins over it.
5.Fry for 2-3minutes or untill the batter is set and brown underneath then flip over on the other side until golden brown.
6.Set aside and make 3 more pancakes.
7.Serve whole and warm dusted with some icing sugar or you could also cut into smaller pieces with a fork and return to pan then sprinkle some sugar and cook for 1 minute over medium heat.
Soaking in Rum is optional and gives the pancake a luxurious taste.
When beating the white, if the bowl is not clean and dry, it can affect the desired results so take care. It may seem hard if you have never done it before but with time and the more you do it you get the hang of it.
You can do without the raisins if you dont have or like them.
