We all know Michelle Obama for her grace and style as the first lady of the United States of America. A loving mother and a dedicated wife to President Obama she serves as a role model to millions of women across the world but who knew she is also a great baker?
One of her favourite things to make is her famous Apple Cobbler and we have the recipe for you!
Recipe: thecuttingedgeofordinary.blogspot.com
Filling:
- 8 Granny Smith apples peeled and sliced.
- 1.5 cups of brown sugar
- 1 teaspoon of cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon of salt
- ¼ cup of plain flour
Combine all the ingredients in a bowl and mix. Allow to sit overnight in a fridge so flavours can permeate the apples.
Crust:
- 3 cups of all-purpose flour
- ½ teaspoon of salt
- 2 teaspoons of sugar
- 16 teaspoons of cold unsalted butter cut in small pieces
- 8 tablespoons of cold water
Combine the flour, salt, and sugar in a large bowl and stir briefly until the mixture is aerated. Cut the butter into the dry ingredients for about 4 to 5 minutes. Drizzle in the water and mix just until the dough comes together. Shape the dough into a flat disk, cover it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat oven at 160 degrees Celsius. Butter and flour the bottom of a large baking dish. Roll out the pastry and layer the bottom of the pan with a little more than half of the pastry and prick a few holes in it.
Pour the apples with the liquid into the pie pan. Dot 6 teaspoons of butter around the apples and use the rest of the pastry to cover the apple mixture entirely (let the pie crust overlap the pan).
Pinch the edges of the dough around the sides of the pan so the mixture is completely covered.
Melt final a couple of teaspoons of butter and brush all over top of crust.
Reduce the oven temperature to 150 degrees Celsius and for up to 3 hours (Check after 2.5 hours so it doesn’t burn) – that’s what makes the crust flaky, just like Barack likes it!
