Chef Jitendra Mamgai is the brains behind the delicious menu that is served in Bhandini, the popular Indian restaurant in InterContinental Hotel Nairobi. What is the best… and the worst dish you’ve tried?

The best dish I have had is methi chicken and the worst is beef stew( I ate by mistake as it is against my culture )


What inspires your cooking?

I began cooking when I was young because of my grandmother. She is one of the reasons I love cooking.


And when did your career with food begin?

In my grandmothers kitchen as a young boy


What is your favorite food to eat?

My favourite food is simple lentil, rice and roti (YUMMERS)


What is your favourite cuisine to cook? Why?

My favourite cuisine is Indian, because of the rich spices and culture that comes on a plate.



What do you do to stay educated about new trends?

I check what is new online, I sample other restaurants; I go back to India every few months to reinforce and research on what’s new.


You’re stranded on a desert island. What five foods would you want with you? What would you make?

Mmmmm, I would want to have chicken, lentil, roti, rice and definitely palak paneer.


If you were being executed tomorrow, what would be your last meal? 

Oh definitely my fave food, rice, roti and lentils(daal)


What is the most essential item in your kitchen?

Garam masala


If you weren’t a chef, or in the food business, what would you be?
I would have been an army officer , I actually even enrolled .
