Chilled Avocado Soup for Breakfast, Anyone?

If you’re an avocado lover, you should try making this chilled avocado soup. It’s awesome for breakfast and you won’t spend a lot of time preparing it, say less than 7 minutes. You can prepare it overnight to enjoy in the morning.

Ingredients

3 avocados, chopped or sliced
400ml of chicken stock
1/2 teaspoon of mixed pepper, salt and sugar
A pinch of garlic
2 teaspoons soy sauce
1/2 glass of red wine vinegar
400ml double cream

Instructions

  1. Place the avocado, stock, seasoning mix, garlic, soy sauce and red wine vinegar in a blender and blitz for about 3 minutes or until smooth.
  2. Place in the fridge for 1 hour.
  3. For serving, swirl in the cream.
