Coconut Chia Pudding

{somalabl} is a word play on the Kenyan slang phrase soma labelread the label. It is a simple, critical clarion call to heighten our awareness to what we put in our body. A call to examine the content of ingredients in what we are drinking or eating. This one gesture helped me develop countless healthy and balanced habits which have guided me in creating JooSmoo products that espouse conscious eating.


Simplicity in process and content has been a key off shoot principle in the {somalabl} lifestyle and a popular product borne from this is our chia pudding variations. It is an easy to prepare, sweet yet nutrient dense dessert or ‘just-because’ treat whose ingredients include whole, unprocessed foods that are free from animal products.

Try making this simple coconut chia pudding at home or come into our cafe and try it there.

Coconut Chia Pudding


  • 500 ml coconut milk 
  • ¾ cup chia seeds
  • Pinch of pink Himalayan salt
  • 750 ml container (preferably glass like a mason jar)



  1. To make the coconut milk: measure 250gm of coconut meat and 250ml of filtered water. Blend it until smooth then sieve it into a glass container.
  2. To make the pudding: stir chia seeds and salt into the coconut milk. 
  3. Leave to sit overnight.


Serving suggestion

Add a generous layer of granola at the bottom of a glass cup or container. Add another generous layer of coconut chia pudding. Spread a thick layer of mango mousse (find the recipe below in the latest issue) and enjoy.

I love coconut and Chia seeds. Normally i take them separately, can’t wait to taste the mixture of both.

Interesting one…..where do I get the Himalayan salt…..from? Kindly assist or is there another alternative?
