Coupe Mount Kenya Dessert

An Italian couple, Loreto and Nicolleta, participated in the ‘Eat-a-World‘ challenge. This challenge usually encourages food lovers from all around the world to try a recipe from a different country. Loreto and Nicolleta, who are based in Canada, made the delicious Coupe Mount Kenya dessert with rum sauce and had it with mango ice cream.

  • 4 ripe mangoes
  • 1 cup of heavy cream
  • 1/2 cup of granulated sugar
  • 1 tablespoon lemon zest
  • 1/2 cup condensed milk
  • pinch of salt

For the pineapple rum sauce:

  • 1.2 cup of pineapple juice, canned
  • 1/2 cup of sugar
  • 1/4 cup of white rum
  • 1/2 fresh pineapple, cut in 1/2 inch dices
  • coarsely chopped pistachios for topping


  1. Peel, pit and mash the mangoes.
  2. Whip the cream with the sugar until it becomes stiff.
  3. Add the lemon zest, mashed mangoes, condensed milk and salt in one bowl.
  4. Pour into a freezer tray and freeze.

For the pineapple rum sauce:

  1. Simmer the pineapple juice and sugar in a saucepan until it dissolves and forms into a syrup.
  2. Add the white rum and let it cool.
  3. Place the freshly cut pineapple pieces in a medium-sized bowl and then pour the pineapple rum sauce over them. Marinate this for several hours or overnight.

How to serve:

Place 2 scoops of mango ice cream in a glass. Top with pineapple rum sauce. Garnish with pistachios.
