There are a number of mandazi recipes out there but we figured that simple is better. This recipe doesn’t use any yeast which cuts down the total time to 35 minutes instead of 2 hours! You can make these for breakfast and stuff them with all your favourite fillings.
Ingredients
2 1/2 teaspoon baking powder
1/4 -1/3 cup sugar
1/2 teaspoon salt
2 cups all-purpose flour
1 large egg
1/4 cup warm water
1/2 cup canned milk (whole/coconut/almond/oat)
1 large egg
Vegetable oil
Optional ingredients
2-3 tablespoons grated coconut or coconut flakes
1/2 teaspoon crushed cardamom
1/2 teaspoon grated nutmeg or cinnamon
Powdered sugar or cinnamon sugar for dusting (optional)
Instructions
- In a large bowl whisk together all the dry ingredients including the spices if you choose to add them.
- Add all the liquid ingredients, eggs, butter and milk and mix until it comes together to form a smooth dough. If it is too sticky add a little bit of flour (try not to add too much). If too hard add a little bit of water.
- Roll out dough to 1 inch thick. Cut into triangles (or desired shape).
Add the vegetable oil to a deep pan or sufuria, until it is at least 3 inches high. - Fry at medium heat until golden brown about 3-5 minutes depending on size. Remove and drain on paper towels or a cooling rack. Serve warm.
