You most definitely have a friend or know of a friend’s friend or their child who will be graduating this year. Going through campus is no mean feat and thus, graduating deserves all the hype. When you think of graduation, it’s nothing but food, lots of it, laughter and the cutting of the graduation cake. The graduation cake not only has to look marvellous, but it also needs to taste just as marvellous! Here’s a vanilla raspberry cake recipe for you. It is quite simple and easy to bake and you get to have the berry on top as a signifier of your hard work being rewarded. How about you bake this and deliver at your friend’s graduation?
Ingredients
Cake ingredients:
3 eggs
1 cup of milk
2 teaspoons of vanilla extract
1 cup of sugar
1/4 teaspoon of salt
3/4 cup of butter
For the raspberry frosting:
3 cups of sugar
1 cup of unsalted butter
1/2 tsp salt
2 cups fresh raspberries
2 tablespoons fresh lime juice
Instructions

Preheat the oven to 350 Fahrenheit. Grease two cake pans with butter, line the bottoms with wax paper, grease again and dust with flour.

Whisk together eggs, 1/4 cup milk and vanilla in a medium bowl. In the bowl, add the sugar, salt and vanilla extract and whisk till smooth.

Add butter and remaining milk.

Fill the mixture into the prepared pans.

Bake 25 to 35 minutes or until a toothpick inserted in the centre comes out clean.

Let the cakes cool in the pans for 10 minutes. Cool completely before proceeding.
For the raspberry frosting:

In a small pan, simmer lime juice and 1 cup raspberries for 6-7 minutes until berries are soft and can easily be mashed.

Push the raspberries through a fine mesh strainer to separate the seeds. Set the puree aside to cool completely.

Beat together butter, sugar and salt until combined. Beat until white and fluffy.

Pour in raspberry puree 1 tablespoon at a time, then beat for another minute.
To serve:
- Cut each of the two cakes in half, horizontally.

Place the first cake layer on a serving plate. Spread a thin layer of raspberry frosting on with a spatula and place a few raspberries on top.

Add the next cake layer and repeat the process.

Use the remaining frosting to ice the top and sides of the assembled cake.

To decorate, place frosting in a piping bag fitted with a large star tip and make decorations as desired.
