If you’re feeling creative, then this recipe is for you. Making poached eggs can be a bit of a struggle especially if you’re doing it for the first time. Baked eggs are a different, better, healthier alternative. The creativity comes in where you can bake the eggs in the shapes you want.
You can enjoy your baked eggs with bacon or fruits if you like. These eggs are also very filling, depending on what you decide to dress them in and you can have them for a light dinner or lunch as well (brunch, maybe?)
Ingredients
Large eggs (as many as you want)
vegetable oil
Salt and pepper to taste
Coriander (optional)
Instructions
- Preheat oven to 350ºF and spread the oil on a nonstick muffin tin.
- Crack eggs into the tin. Season with salt and pepper and coriander.
- Bake eggs at 350ºF for 14-18 minutes or until the yolks have reached the desired texture.
Note
You can add tomatoes, lettuce, red and yellow peppers and mix with the eggs for more flavour before placing in the muffin tins and baking.
