Must-Try Easy Ramadhan Salad Recipes

You can never go wrong with salads. They’re full of fibre, low in sugar and they’re absolutely what you need to be having together with dishes during Iftar this Ramadhan. It’s a blessed Holy month and we want to ensure that what you eat is also good for your body. Here are simple Ramadhan recipes to try.

Grilled chicken salad recipe

  • 4 ounces of grilled chicken breast, skinned
  • 2 cups of chopped lettuce
  • 1/3 cup of sliced carrots
  • 1/4 cup of red onions
  • I ounce of crumbled goat cheese
  • Raspberry vinegar
  1. Cut the chicken into bite-sized pieces.
  2. Toss the chicken with lettuce, vegetables and cheese.
  3. Add the vinegar to taste.

Pineapple Cucumber salad
  • 1/4 cup of thinly sliced red onions
  • 1 fresh pineapple
  • 1 cucumber
  • 1/4 cup of olive oil
  • 1 tablespoon of fresh lime juice
  • 1/4 teaspoon of kosher salt
  1. Submerse red onions in ice water for about 10 minutes
  2. Peel and core the pineapple and cut into bite-size chunks. Slice the cucumber thinly and cut into half.
  3. Drain the onions and pat dry and dice them.
  4. Add the olive oil, lime juice and salt to a bowl and whisk to combine. Add in the pineapple, cucumbers and red onions and toss to coat.

Mango and Avocado Salad


  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of lime juice
  • 2 tablespoons of extra-virgin oil
  • 2 mangos, cubed
  • 2 avocados, cubed
  • 1/2 small red onion, diced
  • Salt and freshly ground pepper
  1. In a large bowl, whisk together the vinegar, lime juice, salt and pepper to taste.
  2. Toss in mangoes, avocado and red onion to coat.

Rainbow Salad

  • 2 cups of shredded green cabbage
  • 2 cups of shredded red cabbage
  • 2 carrots, grated
  • 2 celery stalks, thinly sliced
  • 3 green onions, sliced
  • 1 finely chopped apple
  • 1 tablespoon of lemon juice
  • 1 cup of Tofu mayo or egg-free mayonnaise
  • 1/3 cup of apple juice concentrate
  1. Combine the cabbage, carrots, celery, and green onions in a salad bowl.
  2. In a separate bowl, toss the apple with lemon juice and add to the salad bowl.
  3. Add Tofu mayo and apple juice concentrate and mix.

Sesame Cucumber Salad

  • 2 cucumbers
  • 2 large carrots
  • 1 tablespoon of kosher salt
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of fresh lime juice
  • 2-3 tablespoon of honey to taste
  • pinch of red pepper flakes
  • 1 tablespoon of toasted sesame seeds
  • 2 tablespoon of fresh cilantro (Kenyan coriander), chopped
  1. Cut the cucumbers and carrots into long noodles if you have a spiralizer or thinly slice with a knife.
  2. Place the cut cucumbers in a strainer (sift) and toss with kosher salt. Let the cucumber drain for 15 minutes to drain excessive water.
  3. In a small bowl, whisk together the vinegar, lime juice, honey, sesame oil, sesame seeds and red pepper flakes.
  4. Place the drained cucumbers in a large bowl and add 2-3 tablespoon of the dressing and toss to combine.
  5. Garnish with additional sesame seeds and fresh cilantro.
