On Saturday, 29th November, Ole Sereni Hotel hosted a Christmas cake mixing event for its top Gourmet Club members. Guests participated in an engaging session with Ole Sereni’s Chef Kevin, pouring Christmas pudding ingredients in large pots, to be marinated and baked in time to be served for Christmas.
Over drinks and canapés, invitees listened to Chef Kevin explain the Christmas cake mixing tradition. Originating in England, Christmas cake was once known as plum pudding; although it had no plums, the term likely referred to the raisins heavy in the recipe. The recipe for Christmas cake includes 13 ingredients – said to represent Jesus and his 12 disciples. Ole Sereni’s recipe for Christmas cake stayed true to this tradition:
- Dried mixed fruit
- Brown sugar
- Bread crumbs
- Mixed spices
- Orange juice
- Beef fat
13 ingredients in all. Once mixed, the batter marinates for a full month, and is removed for preparation 3 days before Christmas.
Guests were split into four teams and judged by Chef Kevin on their mixing ability. The winning team was selected for their “professionalism – asking questions about the ingredients and mixing methods, and placing ingredients in the pot intentionally, not haphazardly”. As their prize, the winning team will be specially hosted by Chef Kevin at Ole Sereni’s next Arabian Night, which occurs every Friday. The rest of the guests departed with their own baked Christmas cake, prepared in the same manner the month prior.
