October 20 for Kenyans across the world, is a date of key political and national significance. Mashujaa (Swahili for ‘Heroes’) Day – formerly Kenyatta Day –is a celebrated public holiday in Kenya.
What better way to enjoy the Mashujaa Day long weekend than to plan a nice picnic with family and friends. Take in the outdoors with the following easy-to-make picnic meals!
An assortment of meats, quality chesses, antipasto, vegetable sticks with crackers and dips is always a smart option. Add all your cheese favourites on one plate, from creamy brie & camembert to vintage cheddar and accompany it with crackers, dried fruits and nuts. Or create a gourmet antipasto platter with a selection of olives, peppers, sun dried tomatoes and fresh carrot and celery sticks with a refreshing tzatziki dip. For a real meat feast plate together some exquisitely thin slices of delicious ham, salami, turkey and prosciutto. A cold beverage and a cold cut platter can be a simple way to kick-start your picnic.
Potato salads make the perfect accompaniment to a meal or serve it with some bread for a delicious and substantial meal on its own. There’s a dozen ways to jazz up the simple boiled potato into a delicious potato salad. Try a mixed herb and roast potato salad or the old fashioned creamy potato salad with mayo or try a leaner version by using a low-fat mayo and fat-free sour cream.
Pasta salads are simple to prepare and delicious. With so many varieties – Italian pasta salad, creamy pasta salad, chicken pasta salads they can be as diverse as you want them to be. Toss in fresh green salads, ripe tomatoes, olives, grilled chicken or fish, tuna, or roast veggies and make a great side dish to any picnic.
No picnic is complete without a cool and refreshing beverage. Wash down that lovely food with a simple glass of lemonade with ice and fresh lemon wedges. Mix the flavour by adding fresh fruit puree such as strawberries, watermelon, raspberries, mangoes or pineapple. Top with some lime, lemon wedges and sprigs of mint leaves and you’ve created a classic mocktail. Add a shot of vodka for the adults and you’ve created a cocktail!
There’s something for everyone in a mixed platter with a selection of tasty fillers wrapped in crisp cos lettuce, cheese, fresh tomatoes and crusty baguettes. Use a selection ham, shaved chicken, salami as the fillers or for vegetarian options use cucumbers, carrots and avocados.
Watermelon is a favourite picnic dish to serve as a refreshment. It’s also easier to clean up and dispose of any seeds that way. Simply cut it into big crescent shaped slices and have everyone joyously bite out of their slices.
Fruit salad is one of the perfect picnic desserts that you can make in less than ten minutes and enjoy without gaining some weight. Toss your favourite chopped fruit in a bowl – strawberries, kiwis, star fruit, mangos, apples, pears – whatever you like. Your fruit salad can be enjoyed on its own or accompanied with custard, yoghurt, milk, ice cream and even chocolate for a sweeter treat.
