Nothing says summer quite like a refreshing burst of sweet, citrus sparkling lemonade. Even though the sun seems to have left us, you can still enjoy this refreshing drink without the ice.

Ingredients
- 1 cup Simple Syrup (this is just equal quantities of sugar and water heated together till the sugar dissolves, and then the liquid is cooled)

125g Raspberries

¼ cup Lemon juice

1-litre Sparkling Water

Lots of ice
Directions
- Heat the simple syrup on low heat. When it starts bubbling add the raspberries and mash into the syrup with a potato masher.
- Allow this mixture to cool and then strain through a colander.
- To the cooled mixture add the lemon juice and stir to combine. Put this in a pretty jug and put in ice cubes and sparkling water and chill till you wish to serve.
