It might be a tradition in most households for kids to knock up a little edible surprise on Mother’s day. Since mums are the best, they do deserve to be treated well and to eat adorable food during this day. Here is a list of recipes one can follow to create something home-made and truly delightful.
1. French Toast Kebabs
For this, you can have your kids choose the fruit and arrange the kebab to their liking.
8 large eggs, lightly beaten
2/3 cup non-fat buttermilk
Pinch of salt
1/4 teaspoon vanilla extract
1 loaf of preferably unsliced dense white bread, crusts removed and cut into 1-inch cubes
4 tablespoons unsalted butter
1/2 pint fresh blueberries
1/2 pint fresh raspberries
2 bananas, sliced
Maple syrup (optional)
Preheat oven to 250 degrees. Place a rimmed baking sheet in the oven to warm. In a medium bowl, whisk together eggs, buttermilk, salt, and vanilla. Stir in bread.
In a large sauté pan set over medium heat, melt 2 tablespoons butter. Place half of the bread mixture in pan; cook, turning occasionally with a spatula, until browned on all sides. To keep warm, transfer to the oven. Cook remaining bread in the remaining 2 tablespoons butter as before.
Thread bread cubes onto skewers alternating with blueberries, raspberries, and banana slices. Serve immediately with maple syrup, if desired.
2. Heart-Shaped Eggs and Toast
Note: You could do this with any large cookie cutter shapes you have
Using a 3-inch heart-shaped cookie cutter, remove the centre of a thick slice of bread, and toast it.
Melt 1 and 1/2 teaspoons butter in a small skillet over medium heat.
Place bread slice in skillet, and cook until underside is lightly browned.
Add 1 and 1/2 teaspoons butter, and flip bread. Fit cookie cutter, coated with cooking spray, in bread’s cutout heart, and crack an egg into cutter.
Cover skillet, and cook until egg is set, 2 to 3 minutes. Use tongs to remove cutter. Serve with toasted heart for dipping into yolk.
3. Mini Pancake Cinnamon Rolls
The cinnamon buns are secretly just pancakes covered in icing. On this you use vegan ingredients or a stack of thin pancakes. With this recipe you can make up to 4 mini buns per pancake
1/4 cup maple syrup
1/2 tsp cinnamon
1 cup vegan sour cream OR cream cheese (or a mix of both)
1/2 cup vegan butter
1/2 cup powdered sugar
(Fruit kabobs on the side- optional)
To Make Drizzle:
Soften the butter
Whip together all ingredients with a hand mixer, until smooth and creamy. Sweeten to taste.
Chill until ready to drizzle.
4. Omelet Inside A Pepper
How can one deny their mum this visually amazing food on Mother’s Day?
Peppers, cut into 1/4 rings
Salt & pepper
Heat oil in a non-stick pan. Add pepper rings and cook them for a few minutes.
In the meantime, whisk together the eggs, milk, salt & pepper and Southwestern spice.
Turn the pepper rings over and carefully pour the egg mixture to fill them.
Cook slowly covered until the eggs are set.
Don’t worry if some of the egg mixture “escapes.”
Serve with tomatoes and cilantro.
5. Jam Roll-Ups
These cute pastries can be made with your favourite jam and pie crust.
Makes 12 cups
12 slices bacon
1/2 cup shredded cheddar cheese
Pinch of salt
1/4 tsp black pepper
Preheat oven to 350 degrees.
Using a muffin/cupcake pan, line the holes with a slice of bacon, pressing the bacon around the sides of the hole, not on the bottom.
Crack one egg into each hole.
Sprinkle with salt and pepper and cheese if desired.
Bake at 350 degrees for 20 minutes.
Be careful because these bacon and egg cups could pop right out of the pan.
