Roasted carrots can be eaten for lunch, dinner or as snacks. You can also prepare them and enjoy them with main dishes such as biryani or other main meals.

These can also be packed for your kids if you want them to have something healthy over lunch. Roasted carrots are simple to make and you can use chives when serving for that extra flavour. If you’re not pro-chives, onions will do the trick.
600g of carrots, sliced
2 tablespoons melted butter
2 tablespoons pure maple syrup
½ teaspoon salt
¼ teaspoon ground pepper
2 teaspoons snipped fresh chives (or onions)
- Preheat oven to 200 degrees.
- In a large bowl, stir the carrots, butter, maple syrup, salt and pepper together.
- Spread evenly on a large rimmed baking sheet and roast, stirring once until tender for 20-25 minutes.
- Sprinkle with chives/onions (if desired).
