Summer Salmon Salad Recipe

Just because it doesn’t feel like summer doesnt mean you cant eat like its summer! Nothing beats a freshly made salad. Apart from the fact that they taste great, salads are a great way to keep your body healthy. I particularly love a chicken caesar salad. I’d have that all day, every day, any day! Once in a while, it doesn’t hurt to switch things up. That’s where this summer salmon salad makes a difference. The beauty of this salad is that it adds a twist to the potato salad you so love very dearly. You’re children will love it, you’re guests will love and you’ll be a darling to them all. Summer Salmon Salad


  • 400g hot smoked salmon

  • sea salt

  • black pepper

  • 1 small bunch fresh basil, leaves picked

  • zest and juice of 1 lemon

  • extra virgin olive oil

  • ½ cucumber, peeled

  • 1 small onion

  • 800g potatoes

  • 200 ml natural yoghurt


  1. Cut any large potatoes in half. Boil a pan of salted water and add the potatoes. Let them simmer for 15 minutes until cooked.
  2. Make your dressing by mixing the yoghurt with the lemon zest and juice, a pinch of salt, pepper and a dab of extra virgin olive oil. Drain the potatoes, put them in a mixing bowl and season immediately with salt and pepper. Drizzle a little olive oil, and after 5 minutes, add the dressing and let the potatoes cool.
  3. Halve the cucumber lengthways, remove the seeds and cut into thin slices. Roughly chop the onion. Add the cucumber, onion and basil leaves to the potatoes and mix well. Divide the salad evenly between four plates and flake over the salmon. Drizzle with a little olive oil.

Tip: Season the potatoes while they’re still hot so that they can absorb more flavour.
